Does anyone know which type of valve covers dissipate cylinder head heat more efficiently, Aluminium or Steel?
 
I think you'll struggle to notice any difference between them in normal use. Aluminium is a better conductor than steel, but needs to be much thicker for the same strength.
The best way to keep cylinder heads cool is to make sure all the tinware is correctly installed and keep the valve covers clean of oil residue, mud, etc.
 
There would be no noticeable difference. Keeping the heads at a healthy temp is down to tinware, a good tune and a properly built engine.
