I suspect the welded pans exist mainly due to vehicles being bought direct by the camper conversion companies, and that bolted pans were what you’d get as an regular use vehicle (bus, combi, etc) if you ordered pans.

When the hi beam relay turns on and it feeds both the hi beam and the dash lamp, so if the connector for the blue/white wire is still on the fuse for the hi beams (white wire) then the earth for the dash lamp behind the cluster may have disconnected. I like that idea, the only issue I see is if one is not using campsites with power that fridge will eat a gas bottle quite quickly and they are not cheap.

I totally agree, don't buy the cheap crud, get a decent MPPT controller. You dont get much sun here anyway so you need to be as efficient as you can capturing it.
