when you say it is on S plate presume this means it is already UK registered? and you have no documents 'cos the seller has lost the V5?

You need to contact DVLA and tell 'em what you've done, they will not be happy cos their system depends entirely on at least one person sending them the right bit of paper, but you have carried out an honest transaction and they will define the hoops you must jump through, how do they know that you haven't nicked the van from some old neglected lock up somewhere? I suspect they will not just accept your word they will want something from the registered keeper, hope this is the same person you have paid money to.

You can change the registration on any vehicle except Q plate as long as you do not make it look younger than it is, you buy the reg off whoever owns it then pay DVLA the transfer fee.

The DVLA will allocate an age related plate to a import when it is first registered in the UK, there is a bunch of stuff they want to see, but sounds like this is not your situation. You can get them to change the reg if it has been incorrectly registered previously, you will need the little letter from VW to do this, you tell VW what the chassis number is, they write and tell you all the stuff you already know, then you talk to the DVLA.
