Do i need a thermostat to air filter pipe if i am not running a standard air filter. (running twin carbs)

No, just get used to lumpy cold starts.

Thanks Sparky, does the air flow over the thermostat all the time then? Via the existing tinware etc

Yes, that piece of tinware is only fitted to guide air up into the oil bath air filter.
