1) What's the best / quickest way of removing paint? Grinder with wire wheel, Grinder with sanding disc?

2) What's the best / cleanest way of removing soft underseal? The hard stuff on the underneath chips off OK, but some is soft, and spreading like treacle!!

When using those discs remember to keep the grinder moving and becareful not to let heat build up in the panel or they will warp.

The best way really is 80 Grit discs on a DA Sander. After you've used those grinder discs you'll still need to sand the bare metal with something like P180 to provide a key for your etch primer.
 
regarding the underseal -I'd go for heating it up and scraping it off like Hilly sugests. i.m.o. whatever abrasive you use on a soft material will quickly just clog & fill up the gaps in the abrasive material,therefore making it all level in stead of rough = not much good.

I've tried a wire brush and found it just got clogged up,same thing but even worse when I used a course grade sanding disc.

The wire brush and sanding disc would be better on a brittle/hard material.

for the Paint... sanding disc defo!

the stuff we use on the freighters at work stinks when it's hot, not cool :(
