Changing the bearing itself requires about 2 minutes, a set of long nosed pliers and a bit of copper grease. But you need to remove the engine to gain access, so you want to allow the best part of a day to sort it.
If you're comfortable with dropping the engine out then yes it's a doddle.
Not that difficult taking an aircooled lump out. A few screws for the tinware, a couple of pipes, cables and wires and the 4 bolts that hold the engine to the bellhousing The top starter one is the bugger to get at because the nut is behind the fan housing and not on the back of the bell housing like the other 3. After the engine's out all will become apparent. While you're at it you might as well change the gearbox oil seal. It's only a couple of quid for piece of mind
Just realised, with an early bay you can whip the rear cross member off too to give you even more room. Jobs a good 'un
This is the best bit - you can just slide the engine out the back rather than lifting the bus over it!
Go for it Grazy when the time comes - my mate and I used to get beetle engines out in under an hour at the roadside, it isn't half as complicated as a modern motor.
