Over the last 2 weeks I've noticed a nasty clutch shudder had appeared when I'm pulling away in 1st gear.
Really annoying as I only had a new clutch, flywheel and oil seal fitted 7-8 months ago....
Could the seal have blown already to cause this? The engine hasn't been overfilled with oil so this shouldn't be the cause (I hope)
Any other clues greatly appreciated......

Like radish said - adjust the cable first, if that doesn't work you will have to drop the engine.

If the seal is leaking you would more likely be experiencing clutch slip rather that judder.

Was the release bearing replaced when you did the clutch and pressure plate?

That is what sounds like the culprit to me - I am on my third release bearing already!

Before you do all that, check you have the correct bow in the clutch conduit, it must have a slight bend in it to prevent clutch judder, a manual will tell you the amount

Sounds like the conduit has insufficient bend/spring, should be 1/2" bend :D
