Slightly puzzled by this, some times the bus brakes nice and even, some times it will pull sharply right but 5 mins later it could pull sharply left, any ideas??

There really could be a lot of variables here, but if it isn't the same symptoms each time, I'd probably be taking a look at the pistons sticking to start with.

It used to pull sharply right, but only for a few mins in a morning, it seemed like once the brakes had warmed a little it was ok, i adjusted the drums so they both had even braking, and now it seems random!

As said above I would replace the flexi brake hoses as a start and go from there, presuming you have no fluid leaks?

Rubber:

Or a good upgrade to stainless:

I don't run a steering damper but it was doing it before then, the flexis and whole brake drum stuff is all pretty new, although the master cylinder looked a bit cruddy and rusted, I guess that could potentially be an issue!
