I know the 68 has the longer rear view mirror stalk but what differences are there with the dash and any others?

i don't know the exact deluxe differences,
But in general here are a few highlights:

On buses built before august 68' :

The shade above the speedopot is higher than later years
The speedo has the trip counter in the bottom, not sure if it only 68' but i've seen earlybay speedos with counter on top.
The doors have the little pin to lock doors inside (don't know the exact word)
Outside the front door handles are the same as split bus, with push buttons.
The gearbox is one year only, with some beetle parts

there are more but i can't remember them..let us hear them !

I'm sure there's plenty more but here's some I can think of.

68 Speedo's have the mile/KM counter at the bottom rather than the top:

The brake fluid resiviour is kidney shaped and mounted behind the kick panels

The wiper arms are attached to the (again 68 only) spindles with a grub screw rather than a nut on later vans

There is no firewall between the engine and fuel tank
