I pulled off my brake hub to remove some studs and the inner braking surface seems uneven. Kind of a ripple when running my finger from the inside to the outside. Does this mean it's shot? The brake shoes look fine. I am wondering if I have done this whilst banging/heating the studs to try get them out perhaps...

I think the only way you're going to know for sure is to take it to an engineering shop and get them to put it on a lathe or similar to see whether the braking surface runs true.
 
It's just natural wear and tear, mine were the same and I had them turned on a lathe.

Be careful though because as there is a maximum wear limit on the drum (can't remember off the top of my head).

If there braking ok scuff them up with some emery and refit them,
