Some of my hubcaps clips are broken, so I've bought New ones, but can't remove the old and refit New ones. How is this done please?

They are cold rivetted in place - they will need to have the heads drilled off them, or very carefully cut off with an angle grinder.

When installing, it is mega helpful to buy the correct tool to rivet the new clips in place - it is available from all the normal VW parts suppliers.

Cheers for that. Do you have to removed the wheels to do this?

Indeed you do. I found it easier to do with 2 people - you use the special shaped tool to hold the clip and rivet in place on the front side of the wheel (with the rear of the wheel facing upwards), and then you carefully smash the living daylight savings out of the rear of the rivet to secure it all in place.

I put the tool in a vice, rested the wheel in place on top of this with the rivet picking through and used one person to hold the wheel nice and steady whilst I clouted the rivet with the ball end of a lump hammer. Not sure if you can picture that?!
