How much play is acceptable in the rear bearings. I know there is usually some but how can you tell if there is too much? There is no sound or grating from them.

When cold 1.5 to 2 mm max measured at the rim of the wheel.
(When hot there's hardly any)
If you don't have some play when they are cold they will run too tight when hot.
