Some of you chaps are more clued up on carbs than me.
I have a pair of 36 IDF Webers and I want to get them jetted for my motor.

Engine spec.

1641cc
Engle 100 cam.
1.25/1 ratio rockers
040 stock heads.
VS Exhaust

Any advice on what I need?

Lovely little carbs!

I'd start with 28mm vents, 45-50 idles, 115 or maybe a 120 mains and F11 emulsion tubes.
There are various jetting charts dotted about the web.

The dude at Eurocarb has suggested;-

28 venturis
125 mains
200 airs
55 idles
F11 emulsions
40-50 pump jets

115 mains 125's will be to fat/rich
200airs
50 idles
28vents and set the float !!!!
fuel pressure 3 1/2 lbs. MAX!!!!!!!!
