You can charge an absolute fortune for these (and I`d pay it) when it`s warm. I have been working in a shopping centre near me and there are loads of supermarkets, sarny places etc etc, and they was all sold out of salmon and cream cheese sarnies by lunch time Monday, then all the Tuna ones were gone (apart from with sweet corn YUKKKK !)
Just my take on what I`d like when I`m at a show,, maybe a few of the other peeps could give ideas as to what they`d like at a show ,, might give you an idea or two ,, might not  It looks like you`re starting off with a bit of a disadvantage because of the late decision, but you might come up with some real good options as well. With the other stalls allready being ready to rock so to speak,, they will be all geared up for burgers or bust, you have a little advantage in that you can vary your offerings slightly as your are still getting set up. Exciting times indeed,, so good luck with it and I`ll rack my brains for things I like when I is at a show,, as we all get a little bored with burgers after the first day, then start to look around for something tasty
Ozziedog,,,,,,,,,,,,, Good luck,, good luck and good luck

My wife has a small business which makes sun canopies and she does a range of vintage looking ones for campervans and caravans. She's recently supplied one for somebody with a vintage catering caravan (http://pollythevintagecaravan.com/" onclick="window.open(this.href);return false and it sets it off wonderfully. It may be something to consider for your little puck?
Another style is a dome shaped one which offers more head room...

Are you using the shoulder/butt for the joint?

High praise indeed, thanks what is your food business?
We tried a few different breads and the firmness of the ciabatta worked well, others went a bit soggy due to the moisture in the pork and coleslaw. We are using the blade side of the shoulder for the meat, works really well
I had a pulled pork roll from Silverstone on Friday and it was terrible, dry & chewy meat with onions for some reason. All for the bargain price of £6  I've become fussier too since we started this venture
