I'm in the process of replacing the rubber steering coupling & wondered if I should use the existing castleated nuts with new split pins or just simply replace with a nyloc?

Personal choice I suppose! depending on condition. Most new steering components are supplied with Nyloc nuts, but if your originals are in decent condition, I'd stick with 'em. You can use castellated nuts time and again, whereas Nylocs are a one-time deal.
